Summer is the perfect time to make a batch of these no-bake Mango Rice Krispie Treats loaded with dried mangos and freeze-dried mangos.
These tropical fruit-flavored cereal treats are easy enough to make for a summertime snack but would also make a wonderful dessert for a picnic or backyard party.
I don't know about you but I am not into turning on my oven in the summer to make a snack. It's just too hot.
So, it's the perfect time to make this easy no-bake dessert.
These Mango Rice Krispie Treats are bursting with mango flavor. They are loaded with bits of dried mango slices and freeze-dried mango crumbs so you taste mango in every bite.
To make these treats, you'll start by making our Best Rice Krispie Treats recipe. We taste-tested 20 versions of the original treat in order to find the very best ratio of cereal (4 ⅔ cups), butter (4 tablespoons), and marshmallows (10 ounces).
In this mango cereal treat recipe we added chopped dried mangos along with freeze-dried mango crumbs so I reduced the amount of cereal from 4 ⅔ cups to 4 cups so that the treats would still be nice and chewy.
Let's make some mango crispy treats.
you'll need:
DRIED MANGOS
- Dried mangos are dehydrated mangos that have a soft texture and delicious mango flavor.
- You can find dried mangos in most grocery stores and health food stores.
FREEZE-DRIED MANGOS
- Freeze-dried mangos are also made from real mangos but they are dried until they become crunchy.
- Their texture is airy and crispy but not too hard.
- They are typically rehydrated before eating but can be ground into a powder to flavor these treats.
- You'll crush 2 ounces of freeze-dried mangos and stir them into the treats to give them an intense mango flavor.
MARSHMALLOWS
- We found in our taste testing that the best marshmallows to use are Kraft Jet-Puffed Marshmallows.
- I prefer to use miniature marshmallows as they melt faster but a traditional, large, marshmallow works fine too.
- Kraft Jet-Puffed Marshmallows melt easily and they produce a nice gooey Rice Krispie Treat but they are not too sticky.
- You can use other brands of marshmallows, but just know that the texture may be quite different. We found Kroger and Walmart brands of marshmallows are seriously sticky, hard to stir and produce an overly chewy cereal treat.
BUTTER
- We always recommend using a good quality, European-style, salted butter to make your treats. It seriously makes a huge difference in flavor! However, being the Biscoff Cookie Butter will add so much flavor to these treats, the flavor of the butter isn't quite as important.
- Our favorite brands of butter are Kerrygold, President European-Style Salted Butter, and Private Selection French Cream Salted Butter.
- European-style butter has a higher cream content (less water) than an American brand of butter, making your cereal treats extra creamy!
CRISP RICE CEREAL
- We always recommend using Kellogg's Rice Krispies Cereal because the crisp rice has just the right texture and flavor, but we also found that Kroger brand and Walmart brands taste good too.
- We do not recommend using the Market Pantry brand from Target though, as the cereal is just too hard and crunchy.

stovetop method:
- Grease a large mixing bowl with butter, or spray it with cooking spray, then pour in the 4 cups Rice Krispies Cereal.
- Toss in about ¾ cup of the chopped dried mangos and 2 ounces of crushed freeze-dried mango crumbs.
- Set aside.
- Grease an 8-inch or 9-inch square baking pan.
- Begin to melt 4 tablespoons of salted butter in a medium-large saucepan set over low heat.
- Note about butter - European-style salted butter will really enhance the flavor of your treats. See our Best Rice Krispie Treats recipe and taste testing to see why this makes such a big difference.
- Add 10 ounces of marshmallows to the pan.
- You can use either mini or traditional marshmallows. I prefer the mini marshmallows, as they melt really quickly.
- Stir the marshmallows occasionally until about ¾'s of them are melted.
- Then remove the pan from the heat, and continue to stir, smashing the marshmallows, until they have all melted.
- This process keeps your marshmallows from getting too hot. Overheated marshmallows create hard cereal treats.
- Pour the melted marshmallows over the cereal and mangos and toss to coat.
- Spread the mixture into your prepared pan.
- Sprinkle the remaining chopped mangos over the top of the treats and press down to ensure they stick.
- Allow the treats to cool at room temperature for at least 30 minutes.
- Remove the treats from the pan and cut them into squares or rectangles.
or melt the marshmallows and butter in the microwave:
- Combine the butter and marshmallows in a microwave-safe bowl.
- Heat on high power for 1 minute then remove and stir until the melted butter blends with the marshmallows.
- Keep stirring until the marshmallows melt.
- If needed, reheat for 15-second increments, stirring after each until the marshmallows are fully melted.
