One of my absolute favorite ice cream flavors is mint chocolate chip and I'm thrilled to tell you how amazing that flavor combo tastes when paired with rice krispie treats.
When you blend peppermint extract with the vanilla marshmallows it gives you the sensation of eating ice cream and blended with the crisp rice cereal it's a wonderful combination.
Now that I have tried this flavor combination I cannot wait to experiment with other flavorings in my rice crispy treats.
You will love how easy this 4-ingredient recipe is to make and the whole family will go nuts over this simple snack.
Each square is crispy and chewy and loaded with melt-in-your-mouth chocolate chips and has just a nice amount of peppermint flavor.
Chocolate Chips
Look at all those chocolate chips. They are speckled throughout the treats as well as sprinkled on top. I wanted you to be able to see the chips and to enjoy the texture of the chocolate. I didn't want it blended into the marshmallow.
If you pour the hot marshmallows over the cereal and immediately toss in the chocolate chips they will melt creating brown cereal treats. That's great if you want chocolate Rice Krispie treats, but you'll need to wait until the marshmallow/cereal mixture cools before you toss in the chips if you want chocolate chip cereal treats.
So, be patient and wait. It will be worth a few extra minutes. I promise.
How to make Mint Chocolate Chip Rice Krispie Treats
Ingredients:
- 4 ⅔ cups Rice Krispies Cereal
- 4 tablespoons butter
- 10 ounces marshmallows
- 1 teaspoon peppermint extract
- green food coloring
- ¾ cup mini chocolate chips
Stovetop Method:
- Grease a large mixing bowl with butter, or spray it with cooking spray, then pour in the 4 ⅔ cups Rice Krispies Cereal.
- Begin to melt 4 tablespoons of European-style Salted Butter in a medium-large saucepan set over low heat.
- European-style salted butter will really enhance the flavor of your treats. See our Best Rice Krispie Treats recipe and taste testing to see why this makes such a big difference.
- Add 10 ounces of marshmallows to the pan.
- You can use either mini or traditional marshmallows. I prefer the mini marshmallows, as they melt really quickly.
- Stir the marshmallows occasionally until about ¾'s of them are melted.
- Then remove the pan from the heat, and continue to stir, smashing the marshmallows, until they have all melted.
- This process keeps your marshmallows from getting too hot. Overheated marshmallows create hard cereal treats.
- Stir in the peppermint extract and about 10 drops of green food coloring (more if you want brighter green treats.)
- Pour the melted marshmallows over the cereal and toss to coat.
- Let the mixture cool for 5-8 minutes until it feels cool to the touch.
- Reserve about 3 tablespoons of the mini chocolate chips for on top then toss the rest into the cereal.
- Stir until combined then spread the mixture into a well-buttered 8-inch pan.
- If you prefer, you can grease your pan using cooking spray.
- Sprinkle the reserved mini chocolate chips over top and press them into the cereal treats using the back of a rubber spatula or spoon.
- Allow the treats to cool at room temperature for at least 30 minutes.
- Remove the treats from the pan and cut into squares or rectangles.
Microwave Method:
- Combine the butter and marshmallows in a large microwave-safe bowl.
- Heat on high power for 1 minute then remove and stir until the melted butter blends with the marshmallows.
- Keep stirring until the marshmallows melt.
- If needed, reheat for 15-second increments, stirring after each until the marshmallows are fully melted.
- Stir in the peppermint extract and about 10 drops of green food coloring.
- Then toss in the rice crispy cereal and stir until the cereal is well coated then set aside to cool for 5-8 minutes.
- Reserve about 3 tablespoons of the mini chocolate chips for on top then toss the rest into the cereal.
- Stir until combined then spread the mixture into a well-buttered 8-inch pan.
- Sprinkle the reserved mini chocolate chips over top and press into the cereal treats.
- Give the cereal treats time to cool before cutting.
How to store these treats?
- Place them in an airtight container and leave them at room temperature for about for up to 5 days.
- Be sure you keep them out of direct sunlight and away from any heat source.
- I'm guessing that these will not stick around that long and that you'll be heading to the store to buy more ingredients to make another batch well before day five!
Can I freeze them?
Yes, you can!
- If you want to freeze the treats, wrap them really well in non-stick tin foil or wax paper, then place them in a large zip-top bag, and place them in the freezer for up to three months.
- To thaw the treats, pull them out of the freezer and let them sit at room temperature in the packaging for at least an hour before opening the bag.

- ¾ cup mini chocolate chips

- Begin to melt the butter in a medium-large saucepan set over low heat.
- Add the marshmallows and stir to coat.
- Continue to heat the marshmallows, stirring occasionally, until about ¾'s of them are melted.
- Then remove the pan from the heat, and continue to stir, smashing the marshmallows, until they have all melted.
- Stir in the peppermint extract and green food coloring (about 10 drops if using liquid coloring).
- Pour the melted marshmallows over the cereal and toss to coat.
- Let the mixture cool for 5-8 minutes until it feels cool to the touch.
- Reserve about 3 tablespoons of the mini chocolate chips for on top then toss the rest into the cereal.
- Stir until combined then spread the mixture into a well-buttered 8-inch pan.

Notes
- Store your marshmallow chocolate chip crispy treats in an airtight container for up to 5 days.
- To freeze, wrap well in non-stick tin foil or wax paper then place them in a large zip-top bag. Freeze for up to 3 months. Thaw on the countertop for at least one hour until completely thawed before opening the bag and removing the treats.

Can I use coconut oil instead of butter?

Yes, you can. Use the same amount of coconut oil in the recipe. Be sure to use refined coconut oil if you don't want any coconut flavor. I used virgin coconut oil to make my Vegan Rice Krispie Treats and it tasted great. I loved the mild coconut flavor but don't think it would be great in these mint-flavored treats.
