how to make almost-midnight crispy treats
To decorate the clock faces on the cereal treats, I used royal icing tinted black. You use any icing or frosting that works for you, including store-bought decorating icing.

- 4 ⅔ cups Rice Krispies cereal
- 4 tablespoons salted European butter
- 10 ounces marshmallows (about 40 regular OR 6 cups mini)

let's make some treats!
To make things a breeze, spray all your bowls and spatulas with non-stick cooking spray.
First, line the baking tray with parchment paper.
Spray a large bowl with cooking spray and add the cereal and set aside.
microwave version
Place the butter and marshmallows in a large microwave-safe bowl.
Heat on high for 1 minute. Stir the marshmallows until they start to melt. Heat for an additional 15 seconds and let the bowl sit in the microwave for one minute. Stir the marshmallows very well until smooth, using the residual heat to fully melt the mixture.
Pour the mixture over the cereal and mix very well.
Transfer the treats to the baking tray and use a greased spatula to flatten the treats into a rough rectangle about 10-inches by 12-inches and ¾-inch thick.
Chill for 10 to 15 minutes.
Cut out circles as closely together as possible. Chill the circles until the treats are fully set, about 30 to 60 minutes. You should have about 18 circles.

In a saucepan, place the butter over medium-low heat.
After about half of the butter is melted, add the marshmallows.
Continue to heat, stirring well, until most of the marshmallows are melted. Remove from the heat and keep stirring until the mixture is very smooth.
Follow the rest of the instructions above.
how to decorate your New Year's Eve cereal treats
If you're adding lollipop sticks, insert before adding the decoration.
Prepare royal icing (or use your favorite icing or frosting, including store-bought decorating icing) and tint black.
Assemble a decorating bag with size 2 tip. Fill with black icing and close tightly with rubber bands.
Pipe a clock face at almost midnight.
Let set several hours to overnight. Add ribbon, if desired.
