Load up your marshmallow cereal treats with bits of crunchy peanut butter sandwich cookies then drizzle on some peanut butter to make these amazing Nutter Butter Bars.
There are mix-ins that elevate a cereal treat to the next level and these Nutter Butter Rice Krispie Treats filled with Nutter Butter Cookie pieces and a bit of creamy peanut butter are definitely a step above other crispy treats.
They aren't quite as peanut buttery as our Peanut Butter Rice Krispie Treats or our Honey Peanut Butter Treats but still have a great nutty flavor.
They have a great balance of sweetness from the marshmallows and nuttiness from the cookies.
How to make Nutter Butter Rice Krispie Treats
You will need:
NUTTER BUTTER COOKIES
- You'll break up 12 Nutter Butter Cookies to blend with the marshmallow crispy treats then use another 2-3 cookies to sprinkle over the top of your treats.
- If you like more peanut butter creme filling, feel free to use the new Double Nutty Cookies. They have twice as much filling as the original cookies.
RICE KRISPIES CEREAL
- We tested a variety of crisp rice cereals and we recommend using the original Kellogg's Rice Krispies Cereal for the best flavor and texture.

MARSHMALLOWS
- You can use 10 ounces of any brand of marshmallows you like to make this recipe but we recommend using Kraft Jet-Puffed for the best flavor and texture. We found that store-brand marshmallows make stickier treats so you may want to toss in a bit more cereal if you use them.
- Always use the freshest marshmallows you have on hand. Fresh marshmallows make more delicately chewy treats.
- If you can't find a 10-ounce bag of marshmallows you can usually use 40 regular-size OR 6 cups of mini marshmallows. Different brands of marshmallows do weigh different amounts, so it's always best to use the measurement listed in the nutrition label.

BUTTER
- We have found that European-style salted butter provides the best flavor in our cereal treats recipes. You'll be amazed at the difference good butter will make in this recipe.
- We recommend using KeriGold or President Butter but Kroger Private Selection French-style Butter is great too.
PEANUT BUTTER
- To add more peanut butter flavor to these cereal bars, you'll drizzle some melted creamy peanut butter over the top of the treats.
TOOLS YOU'LL NEED:
- medium-large saucepan
- 8-inch or 9-inch square baking pan
- large mixing bowl
- silicone spatula or large mixing spoon
- butter or cooking spray to grease your pan, bowl, and spatula (I prefer the flavor of butter, but the non-stick spray works too.)
step 1: melt the butter and marshmallows
The trick to making soft and chewy Nutter Butter Bars is to heat the marshmallows just enough to melt them. If you overheat your marshmallows your cereal bars will be hard.
- Cut your butter into small pieces and begin melting them in a medium-large saucepan set over LOW heat.
- Then add the marshmallows and allow them to begin to melt, for about 5 minutes.
- Then, stir to coat the marshmallows in the melted butter.
- Let them melt for a few more minutes, stirring occasionally until 75% of the marshmallows have melted.
- Remove the pan from the heat and continue to stir until all the marshmallows have melted. This will ensure you have soft and chewy treats.
Microwave Option
You can melt the butter and marshmallows in the microwave on high power for 1 minute. Then, remove and stir vigorously until melted. Only if absolutely necessary, heat for an additional 10-15 seconds until the marshmallows are completely melted.
step 2: toss with cereal and cookie pieces
- Grease a large mixing bowl with butter (or spray with baking spray) and pour in the cereal and 12 Nutter Butter Cookies broken into small pieces.
- Pour the melted butter & marshmallows over the cereal and toss to coat.
- We found that Rice Krispies Cereal can get soggy and taste stale if poured into the hot pan so we recommend you pour the marshmallows over the cereal.
step 3: spread into pan and top with cookie pieces and peanut butter
- Spread into a greased pan. This recipe makes enough to fill an 8-inch square pan but I'll also give you the quantities to make a 9x13-inch pan of treats.
- Immediately top the bars with more broken cookie pieces. Be sure to press them onto the top of the treats to ensure they stick.
- Heat a tablespoon or two of creamy peanut butter in the microwave for about 30 seconds just until it's thin enough to pour.
- Drizzle or pipe the melted peanut butter over the top of the treats. I poured the peanut butter into a zip-top bag, snipped off the tip, and piped the peanut butter over the treats.
step 4: let the treats cool then cut them into squares
Set the pan aside for about an hour to allow the treats to cool and the peanut butter to firm up.
Then, cut into squares or rectangles.
How to make a larger batch of these treats?
- Melt 6 tablespoons of European Salted Butter and 16 ounces of marshmallows.
- Stir in 6 ¾ cups of Rice Krispies Cereal and 18 Nutter Butter Cookies, broken into small pieces.
- Spread into a 9x13-inch, greased, pan.
- Top with 4 more Nutter Butter Cookies, broken into pieces.
- Cool for at least 1 hour before cutting into 24 pieces.

Equipment
- 1 8-inch square pan
- 1 large mixing bowl

- 4 ½ cups Rice Krispies Cereal
- 15 Nutter Butter Cookies, broken into pieces
- 4 tablespoons salted butter (European-style butter)
- 10 ounces marshmallows
- 1 tablespoon creamy peanut butter
Instructions
- Grease an 8-inch square pan and a large mixing bowl with butter or baking spray.
- Pour the cereal and about 12 Nutter Butter Cookies (broken into pieces) into the bowl, then set aside.
- Cut the butter into small pieces and place them in a medium-large saucepan.
- Set the pan over LOW heat and allow the butter to begin melting.
- Add the marshmallows to the pan and let them begin to melt.
- Stir the marshmallows and butter occasionally until about 75% melted.
- Remove the pan from the heat and stir until all the marshmallows melt.
- Pour over the bowl of cereal and cookie pieces.
- Stir until well blended.
- Spread into the greased pan.
- Do not pack the cereal treats down too firmly. Just spread into an even layer.
- Heat the creamy peanut butter in the microwave for 15-30 seconds until melted.
- Drizzle the peanut butter over the Nutter Butter Bars.
- Set the bars aside for about an hour so they can cool before cutting into 16 squares.
Notes
storing your treats
- Your cereal treats will taste best if eaten within the first few days but they will stay crispy and fresh for up to 7 days if stored properly in an airtight container or large zip-top bag.
- Do not refrigerate the treats as they may become soggy and soft.
- You can freeze them if you wrap them well in plastic wrap, over-wrap them in tin foil, then place them in a large zip-top bag. They'll keep for up to 3 months.
