Believe it or not, some people don't actually like pumpkin pie. (Crazy, right?) Enter the pumpkin pie Rice Krispie treats! Such a fun, easy, perfect addition to your Thanksgiving table. And the kids will love them!
Here, I add pumpkin spice to our never-fail, BEST basic Rice Krispie treats recipe, and the flavor is divine. If you're making cereal treats as an alternative because you don't like the taste of pumpkin spice, simply omit the spice from the recipe.

Don't have any pumpkin spice? Here is how to make your own.
- 2 tablespoons ground cinnamon
- 2 teaspoons ground nutmeg
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
Combine all of the spices in a small bowl. Store in a spice jar.

- 9-inch round cake pan
- non-stick foil OR regular foil or parchment paper
- cooking spray
- 4 ⅔ cups Rice Krispies (divided)
- 10 ounces marshmallows (about 40 regular size OR 6 cups mini) (divided)
- 4 tablespoons European salted butter (divided)
- 1 teaspoon pumpkin spice (optional)
- orange food coloring
- whipped cream OR frosting tinted white (optional)

We'll make the "crust," and then the "filling."
microwave method
For the quickest and easiest treats, make in the microwave. Stove-top instructions are below!
First, line your baking pan with non-stick foil. Or, line the pan with foil or parchment paper and lightly spray with cooking spray. Set aside.
making the "crust"
Place 1 ⅔ cup Rice Kripsies in a lightly-sprayed, large bowl. Set aside.
In a microwave-safe bowl, place 4 ounces marshmallows (about 12 regular size OR 2 cups mini) and 1 ½ tablespoons butter.
Heat on high for 1 minute. Stir the marshmallows until they start to melt. Heat for an additional 15 seconds and let the bowl sit in the microwave for one minute. Stir the marshmallows very well until smooth, using the residual heat to fully melt the mixture.
Pour the mixture over the cereal and combine well.
Transfer to the baking pan and create a ring at the outer edge. When the Rice Krispie treats cool a bit, use your hands to shape the treats into a "crust."
Let cool.
making the "pie"
Place 3 cups of Rice Krispies in a large, lightly-sprayed bowl and set aside.
Following the instructions above, melt 6 ounces marshmallows (about 28 regular size OR 4 cups mini) with 2 ½ tablespoons butter.
Stir in 1 teaspoon of pumpkin spice mixture and several drops of orange food coloring. Add more food coloring to desired shade.
Scrape the mixture over the cereal and combine well.
Drop by spoonfuls into the center of the "pie." Flatten with a greased spatula to fill the pie. You may have some mixture left over.
Let cool a couple hours.
Remove the treats from the pan and cut into 8 slices.
add "whipped cream"
If desired, add a dollop of whipped cream to each slice.
Or, prepare frosting and tint white. Assemble a decorating bag with a size 1M tip, fill with the frosting, and pipe dollops on each slice.
stove-top method
To prepare Rice Kripsie treats on the stove-top, follow all of the instructions above, but to melt the butter and marshmallow mixtures:
- Begin to melt the butter in a medium-large saucepan set over low heat.
- Add the marshmallows and stir occasionally until about 75% of them are melted.
- Remove the pan from the heat and continue to stir until all of the marshmallows have melted.
- This process keeps your marshmallows from getting too hot. Overheated marshmallows create hard cereal treats.
