Rainbow Rice Krispie treat bites are a unicorn's favorite snack.
They are the perfect size for popping in your mouth (or to pop in lunch boxes). They are all the colors of the rainbow.
And they are easy to make.
how to make Rice Krispie treat bites
These treats are simply Rice Krispie balls dipped in chocolate or candy melts. That's it! Start with a 9 x 13-inch pan of our BEST Rice Krispie treats.
you will need:
RICE KRISPIES
Of course! Use name or store-brand.
MARSHMALLOWS
You'll need 16 ounces of marshmallows. Different brands have different weights, so refer to a scale (or, go by the measurements on the bags) but in general:
16 ounces is 64 regular-size marshmallows and 9 ⅔ cups mini marshmallows
BUTTER
We found that salted European-style butter tastes best.
CANDY MELTS
You will need six colors of candy melts: Red, orange, yellow, green, blue and purple.
You may use white chocolate instead, however to color chocolate, you must use oil-based candy colors.
CANDY MELTS EZ THINS
Candy Melt EZ Thins are optional, but adding a pinch or two of the shortening-based flakes helps the consistency of the candy melts for easier dipping.
BAKING TRAY AND WAX PAPER
You'll need these to rest the bites on after dipping.
STEP ONE: PREPARE YOUR RICE KRISPIE TREATS
Grease a 9x13 inch baking pan with non-stick cooking spray and set aside.
STEP TWO: DIP INTO CANDY MELTS OR CHOCOLATE
In a small, microwave-safe bowl, melt ½ cup of one color of candy melts with a pinch of the EZ Thins (EZ Thins are optional, but they help achieve a better dipping consistency.
To melt, microwave at 70 percent power for 90 seconds. Stir, and continue to microwave in 15-second intervals until about three-quarters of the melts are melted. Stir, using the residual heat to fully melt the candy.
If you're using white chocolate, stir in oil-based candy color at this point.
Drop a Rice Krispie bite into the melted candy, turn over with a spoon, and remove with a fork, tapping the fork on the side of the bowl to remove excess candy.
Place on a baking tray lined with wax paper.
Repeat with all of the bites and candy melts.
Let set at room temperature very well, about 1 hour. (If using white chocolate, you may place in the refrigerator to set.)

Equipment

Ingredients
- 6 tablespoons salted European butter cut into pieces
- 16 ounces marshmallows (about 64 regular OR 9 ⅔ cups mini)
- 7 cups Rice Krispies cereal
- 3 cups candy melts ½ cup each of red, orange, yellow, green, blue, and purple
Instructions
- Grease the baking pan with cooking spray and set aside.
- Combine butter and marshmallows in a large microwave-safe mixing bowl.
- Heat in the microwave for 1 minute then remove and stir until melted. If needed, heat for additional 15-second increments stirring after each until melted.
- Stir in the cereal and press gently into an even layer in the sprayed pan. Let cool.
- Cut your treats into 1-inch squares and shape into circles. Each circle will be about ¾-inch in diameter.
