These marshmallow cereal treats are so easy to make for an afternoon snack or a party dessert and can be flavored like your favorite ice cream including strawberry, chocolate, and mint chocolate chip.

These Rice Krispie ice cream cones are so easy to make using our very best Rice Krispie treat recipe.
This recipe has the perfect ratio of butter (use European-style salted butter for the best flavor), marshmallows, and Rice Krispies cereal and it makes delicious ice cream cone cereal treats.
How to make Rice Krispie treat ice cream cones:
Ingredients (makes 16 ice cream cones)
Rice Krispie Treat "Ice Cream Scoops"
- 4 tablespoons salted butter
- (preferably Kroger Private Selection Creamy French-style Salted Butter, President's Salted Butter, or Kerrygold Salted Butter)
- 10 ounces Jet-Puffed Marshmallows
- 5 cups Kellogg's Rice Krispies Cereal
- 4 tablespoons salted butter
Cones, chocolate, and candy
- 16 ice cream cones (cake cones with flat bottoms work best)
- 4 ounces dark cocoa candy melts or melting wafers
- 16-24 ounces candy like M&M's, Skittles, or chocolate-covered raisins or peanuts.
Make the cereal treat ice cream scoops.
Stovetop method:
- Begin to melt the butter over low heat in a medium or large saucepan.
- Add the marshmallows to the saucepan and stir.
- Continue to stir often, until about 75% of the marshmallows are melted.
- Remove the pan from the heat and continue to stir, smashing the marshmallows using a rubber spatula or the back of a wooden spoon, until the marshmallows completely melt and become smooth.
- Stir in the Rice Krispies cereal or pour the marshmallows over the cereal and toss to combine. Either way works fine.
Microwave Method:
- Combine the butter and marshmallows in a large microwave-safe bowl.
- Heat on high power for 1 minute then remove and stir until the melted butter blends with the marshmallows.
- Keep stirring vigorously, smashing the marshmallows, until the marshmallows melt.
- If needed, reheat for 15-30 second increments, stirring after each until the marshmallows are fully melted, but it's best not to overheat the marshmallows.
- Your cereal treats will become hard when your overheat the marshmallows, so I highly recommend stirring them and smashing them until they melt before putting them back in the microwave for any more time.
- Stir in the rice crispy cereal.
Set the rice krispie treat mixture aside to cool slightly while you get the ice cream cones dipped and filled.

Chocolate Dipped Ice Cream Cones
You can use Wilton Dark Cocoa Candy Melts or Ghirardelli Dark Melting Wafers or any other brand of compound chocolate (confectionery coating) to dip your ice cream cones.
You can use pure chocolate bars or chips but I recommend you temper the chocolate otherwise it will be soft and spotty. You can learn more about the differences between pure chocolate and compound chocolate in my chocolate making tips tutorial over at Hungry Happenings.
Dip and fill the cones.
- Hold one ice cream cone in your hand, turn it upside down, and dip the top edge into melted dark cocoa candy melts.
- Lift the cone out of the chocolate and shake it until all the excess chocolate drips off.
- Turn the cone right side up and set on the counter.
- Immediately fill the cone with candy.
- Spray an ice cream scoop with non-stick spray or grease it with butter.
- Scoop out a nice round mound of the rice krispie treat mixture and place it on top of the chocolate-dipped candy-filled ice cream cone.
- Pop the ice cream cone into the freezer for 3-5 minutes just until the chocolate candy melts harden.
NOTES:
- If you don't freeze the cones immediately it's possible that the candy melts will become spotty once they harden.
If you want to make your crispy cones a little more festive looking you can spoon some more of the dark cocoa candy melts over top and then add lots of rainbow sprinkles.
Be sure to freeze your decorated cones for a few minutes until the candy coating hardens otherwise the candy melts might become streaky or spotty.
You don't have to just use plain rice krispie treats to top your candy-filled cones. There are a lot of ice cream-flavored cereal treats you can use including:
- Mint Chocolate Chip Rice Krispie Treats
- Chocolate Chip Rice Krispie Treats (no mint flavor)
- Chocolate Rice Krispie Treats
- Nutella Rice Krispie Treats
- Reese's Cup Rice Krispie Treats
Each recipe using 4 tablespoons of butter, 10 ounces of marshmallows, and 4 ⅔- 5 cups of crisp rice cereal will make about 16 ice cream cones. Our recipes typically call for using 4 ⅔ cup of cereal but adding just a bit more cereal (5 cups) keeps them from sticking to the ice cream scoop.
Mint Chocolate Chip Ice Cream Cone Cereal Treats
- If making mint chocolate chip cones, you'll add 1 teaspoon of peppermint extract and about 10 drops of green food coloring to the marshmallow mixture. Blend it with the cereal and let it cool slightly before stirring in ¾ cup of mini chocolate chips.
Smaller batches.
If you want to make 4 of each flavor instead of a full 16, you can divide the quantities by four to calculate the quantities of the ingredients you'll need.
Example:
Make 4 traditional Rice Kripie Treat cones using:
- 1 tablespoon butter
- 2.5 ounces marshmallows
- 4 ¼ cups Rice Krispies
Strawberry Rice Krispie Treat Cones
- Add crushed freeze-dried strawberries to the mix.
- Add 2 ounces to the full recipe and ½ ounce to make just 4 ice cream cone treats using the ingredients listed above.
Chocolate Rice Krispie Treat Cones
- Add ½ cup chocolate chips and ¼ cup cocoa powder if using regular Rice Krispies Cereal or simply add ½ cup of chocolate chips if using Cocoa Crispies.
- To make just 4 chocolate cones use 2 tablespoons of chocolate chips and 1 tablespoon cocoa powder or just 2 tablespoons of chocolate chips if using Cocoa Crispies.
