instructions
You will need 4 tablespoons of butter, 10 ounces of marshmallows, and 4 ⅔ cups Rice Krispies cereal. But we will be dividing the ingredients for the green and pink treats.
Here, I use Americolor Soft Gel pastes in Electric Pink and Electric Green. True watermelon-flavor fans, you may sprinkle some watermelon Jello powder in the pink cereal treats!
prepare the pan
- Line a 9-inch cake pan with non-stick foil OR foil lightly greased with cooking spray.
- TIP: If you have an 8-inch cake pan, too, press it on foil to smooth.
make the green rind
- First, let's make the green "rind."
- Place 3 ounces of marshmallows (about 2 cups of mini marshmallows or about 13 regular marshmallows) and 1 ⅓ tablespoon of salted butter in a microwave-safe bowl. Heat for 90 seconds at 70 percent power. Let the mixture rest in the heat of the microwave for a couple minutes.
- Meanwhile, place 1 ⅔ cups Rice Krispies in a large, greased bowl.
- Stir the marshmallow mixture very well until smooth.
- Stir in a few drops of green food coloring.
- Pour the marshmallow mixture over the cereal and stir very well.
- Transfer the green Rice Krispie treats to the pan. Use a spatula to move the green around the outer rim. Then, use your hands to shape the treats in a ring.
- TIP: Wet your hands first to avoid sticking!
make the pink center
- Next, make the pink center.
- Place 7 ounces of marshamallows (4 cups of mini marshmallows OR about 13 regular) in a large, microwave-safe bowl with 2 ⅔ tablespoons of butter.
- Place 3 cups of Rice Krispies in a large, greased bowl.
- Follow the instructions above to make pink treats using pink food coloring.
- Scoop the pink treats in the center of the baking pan, pressing firmly to flatten. Fill the circle with as much of the treats as you can, pressing in place. Depending on how firmly the treats are pressed, you may have a little bit of pink cereal treats leftover.
add the finishing touches
- Insert upside-down chocolate chips in the pink for "seeds."
- Let rest until well-set, about 2 hours, or chill for faster setting .
- Use the foil to remove the treats from the pan and cut into 8 wedges.
