Ingredients
4 ⅔cupsRice Krispies
10 ouncesmarshmallowsabout 40 regular OR 6 cups mini
4 tablespoonsEuropean salted butter
1 cup royal icing
Instructions
Line your baking tray parchment paper and set aside.
Pour the Rice Krispies in a large bowl greased with cooking spray. Set aside.
In a medium-large, microwave-safe bowl, place the marshmallows and butter. Head on high for 1 minute. Stir the marshmallows until they start to melt. Heat for an additional 15 seconds and let the bowl sit in the microwave for one minute. Stir the marshmallows very well until smooth, using the residual heat to fully melt the mixture.
Stir a few drops of green food coloring into the marshmallow mixture until desired shade is reached.
Pour the green mixture over the cereal and blend very well.
Transfer the treats to the baking tray and press evenly to form a rough rectangle ½-inches thick and 10 inches wide by 12 inches long.
Let set 1 to 2 hours, or chill more quickly in the refrigerator.
When ready, use the cookie cutter to cut out squares as closely together as possible. Alternatively, you can use a knife to cut squares. You should have about 16 squares.
To decorate, prepare icing according to the recipe (find a link to my favorite recipe in the ingredients list) and tint black. Assemble the decorating bag with tip and fill with the black icing. Close with a rubber band. OR, use a Ziplock bag and snip the tip. OR, use store-bought, black, cookie icing with built-in tips.
Pipe and fill the hair. Pipe two dots and attach the candy eyes. Add a mouth and scar. Let the icing dry.
Notes
TIP: In place of the royal icing, decorating bag, and tip, you may purchase a black cookie icing with built-in tips. TO MAKE ON THE STOVE TOP:Prepare the baking tray with parchment paper and place the Rice Krispies in a greased bowl, as above. In a large sauce pan, heat the marshmallows and butter on low heat, stirring frequently, until the marshmallows are almost melted. Remove from heat and continue to stir until the mixture is very smooth. Add green food coloring and follow the instructions above.
