Instructions
Spray your bowls and spatulas with cooking spray.
On a baking tray lined with wax or parchment paper, place the plastic eggs, separated. Grease a paper towel with cooking spray and lightly grease inside each egg.
Work with one color at a time. For each color, use 2 ½ ounces marshmallows (about 1 ¼ cup mini OR 12 regular-size), 1 tablespoon salted butter, and 1 ¼ cup Rice Krispies cereal.
Place the marshmallows and butter in a greased, microwave-safe bowl. Microwave for 45 seconds. Stir until very smooth, adding 15 seconds more in the microwave if needed.
Add a few drops of food coloring and stir well. Thoroughly stir in the cereal.
With fingers coated in cooking spray or rinsed with water, slightly overstuff both sides of an egg with the mixture. Press the egg together and snapped closed.
TIP: Fill the eggs first, wash your hands, and then snap the eggs together.
Repeat with the other two colors of food coloring.
Chill the eggs about an hour and carefully remove from the plastic eggs.
