1 ¾-inch circle cookie cutter (often included in a circle cutter set)
8-inch or 9-inch square baking pan
Ingredients
4 ⅔cups Rice Krispies cereal
4tablespoonssalted European-style butter
10ouncesmarshmallows (about 40 regular or 6 cups mini)
Swedish Fish (about 10 to 12 for half the batch)
Gummy Bears or gummy candy
Green fruit roll-ups or Fruit by the Foot
honey
Instructions
Line the baking pan with non-stick foil or parchment paper.
Place the Rice Krispies in a large, greased bowl.
To make on the stove top: Start to melt 4 tablespoons of butter over low heat. Add 10 ounces of marshmallows and heat, stirring frequently, until almost all of the marshmallows have melted. Remove from the heat and stir well until very smooth.
To make in the microwave: Place the marshmallows and butter in a microwave-safe bowl. Heat for 1 minute and let sit for a couple minutes. Stir very well until smooth and melted. If needed, microwave for an additional 15 seconds.
With a greased spatula, scrape the marshmallow mixture over the cereal. Stir to evenly coat the cereal. Gently press into the prepared baking pan and let set at least 1 to 2 hours.
For nigiri, cut pieces of cereal treats with a knife about 1 ½ inch by 1 ¼ inch. Dab honey on top and place a Swedish Fish on the cereal treats.
For Maki, cut 1 ¾-inch circles from the cereal treats. Cut a strip of green fruit rollup. (Tip: Keep the plastic on the candy while cutting.) Remove the plastic and wrap around a circle treat. Snip gummy bears into small pieces. Dab honey on top of the circle treats and place a few gummy pieces.
If you make both nigiri AND maki, depending on the size of your pieces and baking pan, the recipe should yield about 14 pieces of nigiri and 10 to 12 pieces of maki total.
Notes
If you have trouble finding green fruit rollups, the "Tropical" style works well. Just cut out the green and yellow sections. I would suggesting purchasing two boxes, if so. Instead of honey, you may also use light corn syrup or bits of frosting to adhere the candy. For a larger batch of treats in a 9 x 13 inch pan, use:
