How to make sushi Rice Krispie Treats
You only need a few ingredients to make decorated cereal treats.
INGREDIENTS
Rice Krispies Cereal -- We usually recommend using the classic Kellogg's brand for the best flavor and texture.
Butter -- After extensive taste testing, we found that salted European-style better makes these the best Rice Krispie Treats ever.
Marshmallows -- We recommend using Kraft Jet-Puffed Marshmallows because they produce perfectly chewy treats.
Different brands have different textures and weights. See our marshmallow conversion chart for details about measuring marshmallows.
Green fruit roll-ups -- You'll need green fruit roll-ups or fruit by the foot. If you have difficulty finding green, I had luck getting the Tropical Fruit Roll Ups and cutting the green sections from the candy. If so, I recommend purchasing a couple boxes.
Swedish fish -- The fish candy will top the Nigiri sushi.
Gummy Bears -- As we'll be chopping the bears into little pieces, you may use ANY gummy style candy as a substitute.
Honey -- Dabs of honey help the candy adhere to the treats. You may also use light corn syrup or bits of frosting.
TOOLS you'll need:
Extra large mixing bowl -- It's best to have room to mix the cereal with the marshmallow mixture.
Medium sauce pan OR large microwave-safe bowl -- You may melt the butter and marshmallows either on the stove-top or the microwave.
8-inch or 9-inch square baking pan -- I prefer the smaller size for thicker treats.
Non-stick foil or parchment paper -- Line the baking pan so it's easy to pull the entire batch of treats from the pan.
Cooking spray -- Spraying your bowls and spatulas makes everything so much easier.

Circle cookie cutter to cut the maki sushi. I used a 1 ¾-inch circle cookie cutter.
Instructions:
Add 4 ⅔ cups Rice Krispies to a greased, large bowl.
To make Rice Krispie Treats on the stove-top:
Start to melt 4 tablespoons of butter over low heat. Add 10 ounces of marshmallows and heat, stirring frequently, until almost all of the marshmallows have melted.
Remove from the heat and stir well until very smooth.
To make Rice Krispie Treats in the microwave:
Place the marshmallows and butter in a microwave-safe bowl.
Heat for 1 minute and let sit for a couple minutes. Stir very well until smooth and melted. If needed, microwave for an additional 15 seconds.
Mix up your treats:
With a greased spatula, scrape the marshmallow mixture over the cereal. Stir to evenly coat the cereal.
Gently press into the prepared baking pan and let set at least 1 to 2 hours.
Decorate the sushi
For nigiri, cut pieces of cereal treats with a knife about 1 ½ inch by 1 ¼ inch. Dab honey on top and place a Swedish Fish on the cereal treats.
For Maki, cut 1 ¾-inch circles from the cereal treats.
Cut a strip of green fruit rollup. (Tip: Keep the plastic on the candy while cutting.) Remove the plastic and wrap around a circle treat.
Snip gummy bears into small pieces.
Dab honey on top of the circle treats and place a few gummy pieces.
How do I make a larger batch of Rice Krispie Treats?
The recipe here calls for an 8-inch or 9-inch baking pan. This will yield about (depending on the size of your cutters) 14 nigiri and10 to 12 pieces of maki sushi.
If you need a much larger batch, you can prepare the treats in a 9 x 13 inch pan using this ratio:
- 6 tablespoons salted European style butter
- 16 ounces marshmallows
- 7 cups Rice Krispies
You can also make a huge batch of treats by following the instructions to make sheet pan Rice Krispie Treats.
