ingredients

You only need three ingredients, plus red food coloring and Rolo candy.

Rice Krispies, red food coloring, Rolo candy, marshmallows and butter
  • Kellogg's® Rice Krispies cereal - You may use any crispy rice cereal, but our preference is the original.
  • butter - We recommend using salted European-style butter (with a higher butterfat content than American-made butter). It will give your treats the very best flavor. See our taste test results for more information. The salt in the butter helps to balance out the sweetness of the cereal and marshmallows.
  • marshmallows - We recommend using Kraft Jet-Puffed Marshmallows. Some store-brand marshmallows may have different textures and weights. You can use mini or large marshmallows. See our marshmallow conversion chart for details about measuring marshmallows.
  • red food coloring - Any liquid or red food coloring will work, but my personal preference is Americolor Soft Gel Paste Red.
  • ROLOS candy - Rolos candy, unwrapped, are perfect ornament toppers.
  • light corn syrup or honey (optional) - Dabs will help adhere the Rolos on the top of the Rice Krispie Treats.

Equipment

  • extra-large mixing bowl - You want to use a bowl that allows you room to mix the cereal and marshmallows together.
  • medium-large saucepan -If you're making treats on the stove-top, you'll need a sauce pan.
  • microwave-safe bowl -- To make the treats in the microwave, you'll need a large bowl.
  • baking tray - This is handy to place your ornaments on while becoming firm.
  • parchment or wax paper -- To line the baking tray.
  • non-stick cooking spray -- I find spraying bowls and spatulas makes everything so much easier. (You may also use additional butter to grease.)
  • silicone spatula - Grease your spatulas so mixing is easy!

Instructions

Line a baking tray with wax or parchment paper and set aside.

Place 4 ⅔ cups of cereal in a large, greased bowl.

If melting on the stove-top:

Start to melt 4 tablespoons butter in the saucepan over low heat.

Add 10 ounces of marshmallows (about 40 regular size or 6 cups mini) and melt, stirring occasionally, until about 75 percent melted. Remove from the heat and stir until fully melted and smooth.

If melting in the microwave:

Add the marshmallows and butter to the greased, microwave-safe bowl. Heat on high for 1 minute. Let sit a couple minutes and then stir very well until fully melted and smooth.

Tint the mixture red

Add a few drops of red food coloring to the marshmallow mixture and stir well. Continue to add food coloring until desired shade is achieved.

Mix everything together.

Pour over the cereal and blend very well with a greased spatula.

Divide the mixture into 10 pieces and roll each into a ball. Place on the baking tray.

TIP: Grease your hands for easy rolling!

Do not worry if the balls are perfectly round. They will be easier to shape once they firm a bit.

Let firm about 2 hours, reshape if needed, and top with a Rolos candy. The treats should be sticky enough for the candy to adhere, but if not, you can add a dab of light corn syrup or honey to help attach the candy.

Variations and pro tips

Do NOT overheat the marshmallows! This will cause your treats to become hard.

We recommend pouring the hot marshmallows over the cereal instead of the cereal into the hot bowl. This helps with the consistency of the treats.

I chose to make red Rice Krispie Treats, but try other colors. Green Rice Krispie Treats are a great option, but we have instructions to make every color of Rice Krispie Treats.
